Marc Fosh
, one of the island’s veteran Michelin star chefs who was first awarded a Michelin star 18 years ago, comments on the island’s changing gastronomy scene; “When I first won a Michelin star in 2002, I was one of several foreign chefs on the island with a Michelin star, now local Mallorcan chefs are really coming to the fore bringing their own island flair and producing amazing food with local produce.”
